Angry Shrimp - Christmas Eve 2016


To celebrate the end of the Holiday Pandemonium, we had Angry Shrimp with Kale over brown jasmine rice for Christmas Eve Dinner

This dish feels festive with the spicy dried fruit sauce and the expensiveness of shrimp. This would retail for about $28 - $36 per plate, depending on ambiance, We bought 2 lbs of frozen shrimp for $16, and used 1 lbs, it also uses 2 oz of Grand Marnier so this is for a festive occasion

Ingredients:
2 TBSP Raw Pumpkin Seeds
1/3 cup golden raisins
1/4 cup hot water
1/2 cup diced white onion
2 tsp chopped garlic (4 tsp total)
1/4 cup finely chopped dark dried cherries
3/4 tsp dried chipotle powder
1/2 tsp cumin
1/4 cup Grand Marnier
1.5 cups water or veggie broth
1 TBSP corn starch blended with 1 TBSP cold water
1 lb of peeled shrimp (tails on is wonderful)

2 tsp diced garlic
1 large bunch kale with ribs removed

cooked brown basmati rice

Heat up large saute pan, dry.
Toast the pumpkin seeds to a nice brown then put in a bowl to the side to sprinkle on the end\

Blend hot water and golden raisins to make a fine paste in food processor or blender
Return pan and heat touch of oil, start cooking white onion until translucent, adding the 2 tsp of garlic for 1 min
Pour/scrap the golden raisin paste and the chopped cherries into the onion pan, along with the chipolte powder and cumin.
Pour the Grand Marnier over the aromatics and stir until the liquids evaporates, then add the the veggie broth or water.
Bring to a simmer, cook for 7-10 min (during this step, start the kale recipe)
Add the blended cornstarch to the bubbling sauce
Stir until it becomes a thicker sauce
Add peeled shrimp to cook and coat in this exotic sauce

Using another pan with a fitting lid (I have a soup pot with a glass lid), heat 2 tsp olive oil over medium high heat, add 2 tsp chopped garlic, cooking until fragrant.
Add chopped kale, stir to coat in the oil and distribute the garlic.
Put on the lid to start steam cooking.
Stir again after 2 min.

Once the shirmp and kale are cooked through - plate
-cooked brown rice on the bottom
-kale over the rice
-shrimp and a generous glazing of the sauce
-sprinkle the toasted pumpkin seed
-photograph and enjoy!

The French Macaroon

The US and France have a special partnership. They greatly assisted in our war against Britian for our independence. They also gave us their fry, their toast and wine. They also gave a great many culinary feats which you need a special type of masochism to attempt.

I attempted the French Macaroon


Using the method described The Joy of Baking and watching about a dozen other videos, i got some sexy feet! The tops didn't come out perfectly domed, but it have me enough of a taste to try again soon!
